Ingredients

Bell Peppers:

4 large bell peppers (any color)

Stuffing:

1 tablespoon olive oil, 1/2 cup diced onion, 2 cloves garlic (minced), 1 pound ground beef, turkey, or sausage, 1 cup cooked rice or quinoa, 1 cup canned diced tomatoes (drained), 1 teaspoon Italian seasoning, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1 cup shredded mozzarella or cheddar cheese (divided), fresh parsley for garnish (optional)


Instructions

  1. Preheat Grill: Preheat grill to medium heat (about 375°F).
  2. Prepare Peppers: Slice tops off peppers, remove seeds, and trim bottoms if needed.
  3. Cook Filling: Sauté onion, garlic, and meat. Add rice, tomatoes, seasoning, salt, pepper, and 1/2 cup cheese. Mix well.
  4. Stuff Peppers: Fill peppers with mixture and top with remaining cheese.
