Ingredients
Scale
Chicken and Marinade
- 1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
- 3 tablespoons soy sauce
- 2 tablespoons fish sauce
- 2 tablespoons brown sugar
- 1 tablespoon lime juice
- 1 tablespoon vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon black pepper
For Serving
- Wooden or metal skewers
- Lime wedges
- Chopped cilantro
Instructions
- Soak Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
- Prepare Marinade: In a bowl, whisk together the soy sauce, fish sauce, brown sugar, lime juice, vegetable oil, minced garlic, grated ginger, ground coriander, turmeric, and black pepper until well combined.
- Marinate Chicken: Add the chicken pieces to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes or up to 4 hours to allow the flavors to penetrate the meat.
- Preheat Grill: Heat your grill to medium-high heat and lightly oil the grates to prevent sticking.
- Thread Chicken on Skewers: Carefully thread the marinated chicken pieces onto the skewers, leaving a bit of space between each piece to ensure even cooking.
- Grill Chicken Skewers: Place the skewers on the grill and cook for 10 to 12 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F and has a delicious slightly charred exterior.
- Rest and Serve: Remove the skewers from the grill and let them rest for a few minutes. Serve hot garnished with fresh lime wedges and chopped cilantro for an authentic Thai experience.
Notes
- Marinate the chicken overnight for deeper, more intense flavors.
- For added richness and authenticity, serve with a peanut dipping sauce.
- If using chicken breast instead of thighs, reduce grilling time slightly to prevent drying out.
