- 1 pound ground turkey

- 2 medium zucchinis, diced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/4 cup fresh parsley, chopped
Instructions
- Prepare Ground Turkey: Heat olive oil in a large skillet over medium heat. Add ground turkey, cook for 5–6 minutes until browned.
- Cook Aromatics: Add onion and garlic, cook for 2–3 minutes until softened.
- Add Veggies: Stir in zucchini, cook for 3 minutes.
- Combine Ingredients: Add chickpeas, diced tomatoes, smoked paprika, cumin, oregano, salt, pepper, and red pepper flakes. Simmer for 8–10 minutes.
- Finish and Serve: Sprinkle with fresh parsley before serving.
