Ingredients
Scale
Steak and Marinade
- 1 1/2 pounds sirloin steak, cut into 1 1/2-inch cubes
- 1/3 cup low-sodium soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons pineapple juice
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1/2 teaspoon black pepper
Vegetables and Fruit
- 2 cups fresh pineapple chunks
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 small red onion, cut into chunks
Optional Garnish
- 1 tablespoon chopped fresh cilantro
Instructions
- Prepare the Marinade: In a medium bowl, whisk together the soy sauce, brown sugar, pineapple juice, olive oil, minced garlic, grated ginger, and black pepper until well combined.
- Marinate the Steak: Place the sirloin steak cubes in a large resealable bag or shallow dish. Pour the marinade over the steak, seal the bag or cover the dish, and refrigerate for at least 1 hour, or up to 4 hours, to allow the flavors to infuse.
- Prep the Skewers: If using wooden skewers, soak them in water for 30 minutes prior to assembling to prevent burning during grilling.
- Preheat the Grill: Heat your grill to medium-high heat, preparing it for direct cooking of the kebabs.
- Assemble the Kebabs: Thread the marinated steak pieces alternately with pineapple chunks, red and green bell pepper pieces, and red onion chunks onto the skewers. Discard any remaining marinade.
- Grill the Kebabs: Place the skewers on the grill and cook for 8 to 10 minutes, turning occasionally to ensure even cooking and a slight char on all sides. Cook until the steak reaches your desired level of doneness.
- Rest and Serve: Remove the kebabs from the grill and allow them to rest for 5 minutes. Garnish with chopped fresh cilantro if desired. Serve warm for the best flavor experience.
Notes
- For extra caramelization, brush the kebabs lightly with additional pineapple juice during the last few minutes of grilling.
- If outdoor grilling is not an option, these kebabs can be cooked on a grill pan or under the broiler.
- Serve the kebabs alongside steamed rice or coconut rice to complete the meal.
