Ingredients
Scale
Dough
- 1 cup water
- 2 tablespoons unsalted butter
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
Coating
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
Other
- 2 tablespoons vegetable oil for greasing
- Chocolate sauce or caramel sauce for dipping (optional)
Instructions
- Prepare the mold: Grease a silicone or heatproof mold that fits inside the Instant Pot with vegetable oil to prevent sticking and ensure easy removal of churro bites after cooking.
- Make the dough base: In a medium saucepan over medium heat, combine the water, unsalted butter, 2 tablespoons sugar, and salt. Bring the mixture to a boil, then remove from heat immediately to avoid overcooking.
- Add the flour: Stir the all-purpose flour vigorously into the hot liquid until a smooth dough forms with no lumps. Allow the dough to cool for about 5 minutes to prevent cooking the eggs when added.
- Incorporate eggs: Add eggs one at a time to the dough, stirring well after each addition to achieve a smooth and elastic batter without lumps.
- Flavor the dough: Mix in the vanilla extract and 1/4 teaspoon ground cinnamon thoroughly to infuse the dough with sweet, warm flavors.
- Fill the mold: Spoon or pipe the dough evenly into the prepared mold, being careful not to overfill to ensure even cooking.
- Set up Instant Pot: Pour 1 cup of water into the Instant Pot and place a trivet inside. Carefully lower the filled mold onto the trivet.
- Pressure cook: Close the Instant Pot lid and set it to cook on high pressure for 10 minutes to steam the churro bites thoroughly.
- Release pressure and remove mold: Allow natural pressure release for 5 minutes, then carefully open the lid and remove the mold from the Instant Pot.
- Coat churro bites: In a small bowl, mix 1/4 cup granulated sugar with 1 teaspoon ground cinnamon. While the churro bites are still slightly warm, roll them in the cinnamon-sugar mixture until fully coated.
- Serve: Serve the churro bites warm, optionally with chocolate or caramel sauce for dipping to enhance the indulgence.
Notes
- Do not overfill the mold to ensure even cooking of the churro bites inside the Instant Pot.
- Silicone molds are recommended for their flexibility and ease of removing the churro bites when cooked.
- For extra depth of flavor, consider adding a pinch of nutmeg or cardamom to the dough mixture.
