- 2 (15 oz) cans white beans (cannellini or great northern, drained and rinsed)
- 4 cups chicken or vegetable broth
- 2 cups chopped kale or spinach
- 1 tablespoon fresh parsley (chopped)

Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through, about 6–8 minutes. Remove excess grease if necessary.
- Add the diced onion, carrots, and celery, and cook for 5–6 minutes until the vegetables begin to soften. Stir in the garlic, oregano, thyme, red pepper flakes, salt, and black pepper. Cook for 1 minute until fragrant.
- Add the diced tomatoes, white beans, and broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20–25 minutes, or until the vegetables are tender and flavors are blended.
- Stir in the kale or spinach and cook for an additional 3–5 minutes until wilted. Taste and adjust seasoning if needed.
- Ladle into bowls and top with chopped parsley and grated Parmesan if desired. Serve with crusty bread.
