For the Burgers:
- 1 1/2 pounds ground beef (80/20 blend)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
For the Toppings:
- 1 large onion (thinly sliced)
- 2 fresh jalapeños (thinly sliced)
- 4 slices cheddar cheese (or pepper jack)
- 4 brioche buns (toasted)
- 2 tablespoons butter
- 2 tablespoons mayonnaise
- 2 tablespoons ketchup
- 1 teaspoon mustard
- Lettuce leaves and pickle slices for serving
Instructions
- Prepare the Burgers: Divide ground beef into 4 portions, shape into balls, and season with salt, pepper, and garlic powder.
- Cook the Onions and Jalapeños: In a hot skillet, cook onion and jalapeño slices until softened and slightly charred. Set aside.
- Smash the Patties: Flatten beef balls in the skillet, cook until crispy, then top with cheese and the onion-jalapeño mixture.
- Assemble the Burgers: Toast buns, spread with mayo, ketchup, and mustard. Add lettuce, pickles, and the jalapeño-onion smash patties.

Notes
- For double-stacked burgers, make 8 thinner patties instead of 4.
- If you prefer less heat, reduce the amount of jalapeños or use poblano peppers instead.
