Description

These Jalapeño Popper Stuffed Black Bean Burgers are a flavorful and spicy twist on traditional veggie burgers. Filled with a creamy jalapeño and cheese mixture, these burgers are sure to impress at your next cookout or weeknight dinner.

Ingredients

Scale

Main Burger Ingredients:

  • 2 cans (15 ounces each) black beans, drained and rinsed
  • 1 cup breadcrumbs (regular or panko)
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs (or flax eggs for vegan)

Jalapeño-Cheese Filling:

  • 2 fresh jalapeños, seeded and diced
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon olive oil (for cooking)

Instructions

  1. Main Burger Preparation: In a large bowl, mash black beans until mostly smooth. Stir in breadcrumbs, onion, garlic, smoked paprika, cumin, salt, pepper, and eggs. Mix until well combined.
  2. Jalapeño-Cheese Filling: In a small bowl, mix jalapeños, cream cheese, and cheddar until smooth.
  3. Form Patties: Divide bean mixture into 8 equal portions. Flatten each portion, place about 1 tablespoon of jalapeño-cheese filling in the center, then fold bean mixture over filling, sealing edges to form patties.
  4. Cooking: Heat olive oil in a large skillet over medium heat. Cook burgers for 4 to 5 minutes per side, until golden and heated through.
  5. Serve: Serve on buns with your favorite toppings.

Notes

  • For a spicier kick, keep some jalapeño seeds in the filling or add hot sauce.
  • These patties can be made ahead and frozen before cooking—just thaw slightly before pan-frying.
