Instructions
- Cook Lentils: In a medium saucepan, combine the rinsed lentils and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20 to 25 minutes until lentils are tender and the liquid is fully absorbed.
- Sauté Aromatics: While lentils cook, heat olive oil in a skillet over medium heat. Add the finely chopped onion and sauté for 3 to 4 minutes until softened and translucent.
- Add Spices and Garlic: Add minced garlic, chili powder, ground cumin, smoked paprika, salt, black pepper, and red pepper flakes if using. Cook for about 1 minute until the spices are fragrant.
- Combine Lentils and Seasonings: Stir the cooked lentils into the skillet with the sautéed onion and spices. Cook for 2 to 3 minutes more until everything is heated through and flavors are well combined. Adjust seasoning to taste if needed.
- Warm Tortillas: Heat the corn or whole wheat tortillas in a dry skillet or microwave until warm and pliable.
- Assemble Tacos: Spoon the lentil mixture evenly onto each tortilla. Top with shredded lettuce, diced tomatoes, cheese of choice, and fresh cilantro. Serve immediately with lime wedges on the side for squeezing over the tacos.
