Description
Enjoy a satisfying and flavorful low-carb pickle sandwich that’s perfect for a quick and easy lunch. This unconventional sandwich swaps bread for crisp dill pickles filled with deli meats, cheese, and fresh veggies.
Ingredients
Scale
Dill Pickle Sandwich:
- 2 large whole dill pickles, halved lengthwise
- 4 slices deli turkey or ham
- 2 slices cheddar or Swiss cheese, halved
- 1 tablespoon mayonnaise or cream cheese
- 1 teaspoon mustard (optional)
- 4 lettuce leaves
- 2 tomato slices
- Salt and black pepper to taste
Instructions
- Slice and Prep Pickles: Slice each dill pickle in half lengthwise and pat dry with a paper towel to reduce moisture.
- Spread Condiments: Spread mayonnaise (or cream cheese) and mustard on the cut sides of the pickles.
- Layer Ingredients: Layer lettuce, tomato, turkey or ham, and cheese on one pickle half.
- Season and Assemble: Season with a pinch of salt and pepper, then top with the other pickle half to create a sandwich. Repeat for the second sandwich.
- Serve or Wrap: Serve immediately, or wrap in parchment for a quick grab-and-go option.
Notes
- For extra crunch, add red onion or a few slices of cucumber.
- You can also hollow out the center of the pickles slightly to make room for more filling and reduce mess.
