Ingredients
Scale
Wet Ingredients
- 1 1/2 cups warm water (110°F)
- 2 1/4 teaspoons active dry yeast (1 packet)
- 2 tablespoons olive oil
- 1 teaspoon apple cider vinegar
- 2 large eggs
Dry Ingredients
- 2 cups almond flour
- 1/2 cup coconut flour
- 1/4 cup ground flaxseed
- 1/4 cup psyllium husk powder
- 1 teaspoon salt
- 1 teaspoon garlic powder (optional)
- 1 teaspoon onion powder (optional)
Instructions
- Activate the yeast: Add the warm water, active dry yeast, olive oil, and apple cider vinegar into the bread machine pan. Allow the yeast to activate for 5-10 minutes if your bread machine has a proofing function, ensuring it becomes bubbly and ready for mixing.
- Mix dry ingredients: In a separate bowl, whisk together the almond flour, coconut flour, ground flaxseed, psyllium husk powder, salt, and optional garlic and onion powders until well combined.
- Add remaining ingredients to the bread machine: Add the dry flour mixture and eggs to the bread machine pan containing the yeast mixture.
- Start the bread machine: Select the “dough” or “basic” setting on your bread machine and allow it to run the full cycle, which will mix, knead, proof, and bake the bread.
- Cool the bread: When the baking cycle finishes, carefully remove the bread from the pan and place it on a wire rack. Let it cool completely for at least 20 minutes before slicing to prevent crumbling and to allow the texture to set.
Notes
- Psyllium husk powder is essential for providing structure and elasticity in low-carb, gluten-free breads.
- Store the bread in an airtight container in the refrigerator for up to 5 days or freeze individual slices for longer storage.
- This recipe is best suited for bread machines designed for 1.5 to 2-pound loaves.
- Feel free to add herbs or seeds such as rosemary, sesame, or sunflower seeds for additional flavor and texture.
