2 shallots (thinly sliced)
8 oz cremini or baby bella mushrooms (sliced)
2 cloves garlic (minced)
1 teaspoon fresh thyme leaves
1/4 teaspoon salt
1/4 teaspoon black pepper

Herbed Goat Cheese Filling:

4 oz herbed goat cheese (softened)
1 tablespoon heavy cream or milk
1 egg (beaten, for egg wash)
optional fresh parsley or microgreens for garnish


Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Sauté Shallots and Mushrooms: In a skillet, heat olive oil and butter. Cook shallots until soft, then add mushrooms, garlic, thyme, salt, and pepper. Cook until tender.
  3. Prepare Puff Pastry: Roll out the puff pastry, cut into squares, and score a border. Spread goat cheese inside the border, top with mushroom mixture, and brush edges with egg wash.
  4. Bake: Transfer tarts to the baking sheet and bake for 18–22 minutes until golden and puffed.
