Cookie Bars:
- 1 cup unsalted butter, softened
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 cups old-fashioned rolled oats
- 1 cup raisins
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Mix Wet Ingredients: In a large bowl, cream together butter, brown sugar, and granulated sugar. Add eggs one at a time, then mix in vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk flour, baking soda, cinnamon, and salt. Gradually add dry mixture to wet ingredients.
- Add Oats and Raisins: Fold in oats and raisins until just combined.
- Bake: Spread dough in the baking pan and bake for 25–30 minutes until golden and set.
- Cool and Cut: Cool completely before cutting into bars.
Notes
- For chewier bars, slightly underbake and allow them to finish setting as they cool.
- You can swap half the raisins with chopped walnuts or pecans for added crunch.
