Filling:
- 6 cups fresh peaches, peeled and sliced (or thawed frozen peaches)
- 1 tablespoon lemon juice
- 1/4 cup granulated sugar

Crisp Topping:
- 3/4 cup old-fashioned rolled oats
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into cubes
Instructions
- Preheat the oven: Preheat the oven to 350°F and lightly grease a 9×9-inch or similar-sized baking dish.
- Prepare the peach filling: In a large bowl, toss the sliced peaches with lemon juice, sugar, cornstarch, and cinnamon until evenly coated. Spread the peach mixture into the prepared baking dish.
- Make the crisp topping: In another bowl, combine oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Add the cold cubed butter and mix until the topping resembles coarse crumbs. Sprinkle the topping evenly over the peaches.
- Bake: Bake for 35–40 minutes, or until the topping is golden brown and the filling is bubbly.
- Serve: Let cool for at least 10 minutes before serving.
