  • 1 tablespoon maple syrup or honey
  • 1 teaspoon sesame oil
  • 1 clove garlic (minced)
  • ½ teaspoon grated fresh ginger (optional)
  • ¼ cup hot water (from cooked noodles)

Garnish:

  • 2 green onions (sliced)
  • 1 tablespoon sesame seeds
  • crushed red pepper flakes (optional)
  • chopped peanuts and fresh lime wedges for garnish

Instructions

  1. Cook the Ramen Noodles: Prepare the ramen noodles according to package instructions, discarding the seasoning packets. Drain and reserve ¼ cup of the cooking water.
  2. Make the Peanut Sauce: In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, maple syrup, sesame oil, garlic, and ginger. Gradually add the reserved hot noodle water to thin the sauce until smooth and pourable.
  3. Toss and Garnish: Toss the hot noodles with the peanut sauce until coated. Top with green onions, sesame seeds, and crushed red pepper flakes if desired. Garnish with chopped peanuts and a squeeze of lime.
  4. Serve: Enjoy warm or at room temperature.
