Pecan Pie Balls:

- 1 cup graham cracker crumbs
- 1 cup Medjool dates (pitted and chopped)
- ¼ cup maple syrup or honey
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- ½ cup melted chocolate (optional, for dipping)

Instructions
- In a food processor, pulse pecans until finely chopped but not paste-like.
- Process until the mixture comes together and holds its shape when pressed.
- Scoop and roll into 1-inch balls using your hands.
- Place on a parchment-lined tray.
- If desired, dip each ball halfway into melted chocolate and return to the tray.
- Sprinkle with crushed pecans or flaky salt before the chocolate sets.
- Refrigerate for 30 minutes to firm up before serving.
Add graham cracker crumbs, chopped dates, cinnamon, salt, vanilla, and maple syrup or honey.
