Pecan Pie Balls:

  • 1½ cups pecans (finely chopped)
  • 1 cup graham cracker crumbs
  • 1 cup Medjool dates (pitted and chopped)
  • ¼ cup maple syrup or honey
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup melted chocolate (optional, for dipping)
  • crushed pecans or flaky sea salt for garnish (optional)

Instructions

  1. In a food processor, pulse pecans until finely chopped but not paste-like.
  2. Add graham cracker crumbs, chopped dates, cinnamon, salt, vanilla, and maple syrup or honey.

  3. Process until the mixture comes together and holds its shape when pressed.
  4. Scoop and roll into 1-inch balls using your hands.
  5. Place on a parchment-lined tray.
  6. If desired, dip each ball halfway into melted chocolate and return to the tray.
  7. Sprinkle with crushed pecans or flaky salt before the chocolate sets.
  8. Refrigerate for 30 minutes to firm up before serving.
