Cookie Dough:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- ½ cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 2¼ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
Add-Ins:
- 1 box (3.4 oz) instant pistachio pudding mix
- 1 cup white chocolate chips
- 1 cup chopped pistachios, shelled and lightly salted
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and prepare a 9×13-inch baking pan with parchment paper.
- Mix Wet Ingredients: In a large bowl, cream together softened butter, granulated sugar, and brown sugar. Beat in eggs one at a time, then add vanilla extract.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, salt, and pistachio pudding mix.
- Combine Wet and Dry Ingredients: Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in white chocolate chips and chopped pistachios.
- Bake: Spread dough evenly in the pan and bake for 25–30 minutes until golden. Cool completely before cutting into bars.
Notes
- For extra pistachio flavor, add more chopped pistachios on top before baking.
- Store bars in an airtight container at room temperature for up to 5 days or freeze for longer storage.
