Pita Fries

Tzatziki Sauce

- ¼ cup shallot or red onion, finely diced
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 2 teaspoons fresh mint, finely chopped & packed
- 2 teaspoons fresh dill, finely chopped & packed

Instructions
- Prepare Pita Fries: Cut each pita bread into ½-inch wide strips. Place the strips in a medium bowl and drizzle with 2 tablespoons of olive oil. Sprinkle ½ teaspoon Greek seasoning and ¼ teaspoon oregano over the pita strips, then toss well to evenly coat all pieces.
- Bake Pita Fries: Preheat your oven to 400°F (200°C). Arrange the seasoned pita strips in a single layer on a baking sheet lined with parchment paper. Bake for 6-8 minutes or until the pita fries are crispy and golden brown. Keep an eye on them to prevent burning.
- Prepare Tzatziki Sauce: While the pita fries bake, combine 1.5 cups plain Greek yogurt, 1 cup grated cucumber (squeeze out excess water), ¼ cup finely diced shallot or red onion, and 2 cloves minced garlic in a bowl. Add 1 tablespoon lemon juice, 2 teaspoons finely chopped fresh mint, 2 teaspoons chopped fresh dill, ⅛ teaspoon kosher salt, and 1 tablespoon olive oil. Stir until well blended.
- Let Tzatziki Rest: Allow the tzatziki sauce to rest at room temperature for about 5 minutes to let the flavors meld together. Taste and adjust by adding more lemon juice if desired before serving.
