  1. Prepare Pita Fries: Cut each pita bread into ½-inch wide strips. Place the strips in a medium bowl and drizzle with 2 tablespoons of olive oil. Sprinkle ½ teaspoon Greek seasoning and ¼ teaspoon oregano over the pita strips, then toss well to evenly coat all pieces.
  2. Bake Pita Fries: Preheat your oven to 400°F (200°C). Arrange the seasoned pita strips in a single layer on a baking sheet lined with parchment paper. Bake for 6-8 minutes or until the pita fries are crispy and golden brown. Keep an eye on them to prevent burning.

Prepare Tzatziki Sauce: While the pita fries bake, combine 1.5 cups plain Greek yogurt, 1 cup grated cucumber (squeeze out excess water), ¼ cup finely diced shallot or red onion, and 2 cloves minced garlic in a bowl.
