For the bars:
- 4 large eggs
- 1 2/3 cups granulated sugar
- 1 cup vegetable oil
- 1 can (15 oz) pumpkin puree
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 teaspoon baking soda
For the frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 teaspoons vanilla extract
- 2 cups powdered sugar
Instructions
- Preheat oven and prepare pan: Preheat oven to 350°F and grease a 10×15-inch jelly roll pan.
- Mix wet and dry ingredients: In a large bowl, beat eggs, sugar, oil, and pumpkin until smooth. In a separate bowl, whisk together flour, baking powder, cinnamon, ginger, nutmeg, salt, and baking soda. Gradually combine dry ingredients into wet mixture.
- Bake: Pour batter into prepared pan and bake for 25 to 30 minutes until a toothpick comes out clean.
- Prepare frosting: Beat cream cheese and butter until smooth. Add vanilla and powdered sugar gradually until fluffy.
- Frost and serve: Spread frosting over cooled bars, slice, and enjoy!
Notes
- Enhance the flavor by adding 1/2 teaspoon ground cloves to the batter.
