  • 1 can (15 oz) pumpkin puree
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder

  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda

For the frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 350°F and grease a 10×15-inch jelly roll pan.
  2. Mix wet and dry ingredients: In a large bowl, beat eggs, sugar, oil, and pumpkin until smooth. In a separate bowl, whisk together flour, baking powder, cinnamon, ginger, nutmeg, salt, and baking soda. Gradually combine dry ingredients into wet mixture.
  3. Bake: Pour batter into prepared pan and bake for 25 to 30 minutes until a toothpick comes out clean.
  4. Prepare frosting: Beat cream cheese and butter until smooth. Add vanilla and powdered sugar gradually until fluffy.
