Graham Cracker Crust:
- 1 3/4 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
Cheesecake Filling:
- 3 packages (8 oz each) cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup pumpkin puree
- 1 1/2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
Optional Topping:
- Whipped cream for serving
Instructions
- Preheat oven and prepare pan: Preheat oven to 325°F and line a 9×13-inch baking dish with parchment paper.
- Make the crust: Combine graham cracker crumbs and melted butter, then press into the bottom of the pan.
- Prepare the filling: Beat cream cheese and sugar, add eggs one at a time. Set aside some mixture, then add pumpkin, spice, and vanilla to the rest.
- Assemble and bake: Pour pumpkin mixture over crust, top with reserved cream cheese mixture, swirl, and bake for 45-50 minutes.
- Chill and serve: Cool, refrigerate for 4 hours, slice, and serve with whipped cream if desired.
Notes
- For extra crunch, add chopped pecans to the crust.
- Bars can be made a day ahead for convenience.
