Description

This luscious Raspberry Mousse is a light and airy dessert made with fresh raspberries, whipped cream, and a hint of vanilla. The combination of sweetened raspberry puree and softly whipped cream creates a delicate mousse that’s perfectly balanced with a touch of lemon and gelatin for structure. Ideal for making ahead, this elegant dessert is garnished with fresh raspberries and optional mint leaves, making it an ideal treat for summer gatherings or special occasions.

Ingredients

Scale

Raspberry Puree

  • 2 cups fresh raspberries (plus extra for garnish)
  • 1/2 cup granulated sugar
  • 2 tablespoons lemon juice

Gelatin Mixture

  • 1 tablespoon unflavored gelatin
  • 3 tablespoons cold water

Whipped Cream Mixture

  • 1 1/2 cups heavy whipping cream
  • 1 teaspoon vanilla extract

Garnish

  • Fresh raspberries (for garnish)
  • Fresh mint leaves (optional)

Instructions

  1. Puree the Raspberries: Puree the fresh raspberries in a blender or food processor until smooth. Strain the mixture through a fine-mesh sieve to remove all seeds, resulting in a smooth raspberry puree.
  2. Heat the Raspberry Mixture: In a small saucepan over medium heat, combine the raspberry puree, granulated sugar, and lemon juice. Stir continuously until the sugar has completely dissolved and the mixture is heated through but not boiling.
  3. Bloom the Gelatin: In a separate small bowl, sprinkle the unflavored gelatin over the cold water. Let it sit for 5 minutes to allow the gelatin to bloom and absorb the water.
  4. Incorporate Gelatin: Stir the bloomed gelatin into the warm raspberry mixture until it is fully dissolved. Remove from heat and let the mixture cool to room temperature.
  5. Whip the Cream: In a large mixing bowl, whip the heavy whipping cream with the vanilla extract until soft peaks form. This will add volume and a light texture to the mousse.
  6. Combine Mixtures: Gently fold the cooled raspberry mixture into the whipped cream using a spatula, taking care not to deflate the cream and maintaining the airy texture.
  7. Chill the Mousse: Spoon the mousse evenly into individual serving glasses or bowls. Refrigerate for at least 2 to 3 hours, or until the mousse is fully set and firm.
  8. Garnish and Serve: Before serving, garnish the mousse with fresh raspberries and optional fresh mint leaves for a colorful and refreshing finish.

Notes

  • For a smoother mousse, ensure the raspberry puree is well strained to remove all seeds.
  • Do not boil the raspberry mixture after adding gelatin to prevent weakening its setting ability.
  • If you prefer a firmer mousse, chill it longer or increase the gelatin slightly.
  • Heavy whipping cream should be cold for best whipping results.
  • This mousse can be prepared a day in advance and refrigerated until ready to serve.
