Instructions
- Prepare the crust: Preheat the oven to 350°F. Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan and bake for 8 minutes. Cool.
- Make the cheesecake base: Beat cream cheese until smooth. Add sugar, lime juice, lime zest, and vanilla. Spread over crust.
- Make the mousse layer: Bloom gelatin in cold water, dissolve in hot water. Whisk lime juice and sugar, then add gelatin. Whip cream to stiff peaks, fold in lime mixture.
- Chill and serve: Spread mousse over base, refrigerate for at least 4 hours. Garnish with whipped cream and lime zest before serving.
