- 4 cups chopped rhubarb
- 1 1/2 cups granulated sugar
- 2 cups water

Instructions
- Cook the Rhubarb: In a medium saucepan, combine the chopped rhubarb, granulated sugar, and 2 cups of water. Bring the mixture to a boil over medium heat. Once boiling, reduce the heat and let it simmer gently for 10 to 12 minutes until the rhubarb softens and releases its juices.
- Strain the Mixture: Remove the saucepan from the heat and allow it to cool slightly. Strain the rhubarb mixture through a fine mesh sieve into a large pitcher, pressing on the solids to extract as much liquid and flavor as possible.
- Add Lemon Juice and Water: Stir in the remaining 2 cups of water along with the freshly squeezed lemon juice. Taste the lemonade and adjust sweetness by adding more sugar if preferred, stirring until dissolved.
- Chill the Lemonade: Place the pitcher in the refrigerator and chill for at least 1 hour to allow the flavors to meld and the drink to become nicely cold.
- Serve: Serve the rhubarb lemonade over ice, garnished with lemon slices and fresh mint leaves for a refreshing presentation.
