  • juice of 1 lime
  • 1 cup chopped fresh cilantro (divided)
  • 2 green onions (sliced)
  • salt and pepper to taste
  • optional: cooked rice or rice noodles for serving

Instructions

  1. In a large pot, heat coconut oil over medium heat. Add chopped onion and sauté for 3–4 minutes until soft and translucent. Stir in the garlic, ginger, coriander, turmeric, and red pepper flakes (if using), and cook for 1 minute until fragrant.
  2. Pour in the chicken broth and bring to a simmer. Stir in the coconut milk, shredded chicken, and fish sauce or soy sauce. Simmer gently for 10–15 minutes to let the flavors meld. Add lime juice and half of the chopped cilantro. Taste and adjust seasoning with salt and pepper.
  3. Serve hot, topped with remaining cilantro and green onions. Add cooked rice or noodles to the bowl before ladling in the soup for a heartier meal.
