Salmon:

  • 4 salmon fillets (6 oz each)

Asparagus:

  • 1 bunch asparagus (trimmed)

  • 2 cloves garlic (minced)
  • 1 tablespoon fresh parsley (chopped)

  • Foil sheets for wrapping

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare foil packets: Cut 4 large sheets of aluminum foil, each about 12 inches long. Place a salmon fillet in the center of each foil sheet. Divide the asparagus evenly among the packets and arrange beside the salmon.
  3. Season and wrap: Drizzle each fillet with olive oil and lemon juice. Sprinkle with garlic, parsley, thyme, salt, and pepper. Top each with lemon slices. Fold the foil over the salmon and asparagus to create a sealed packet, crimping the edges to close tightly.
  4. Bake: Place the foil packs on a baking sheet and bake for 15–18 minutes until the salmon is cooked through.
  5. Serve: Carefully open the foil packs (watch for steam) and serve immediately.

Notes

  • These foil packs can also be cooked on the grill over medium heat for 12–15 minutes.
