Instructions
- Sauté Vegetables: In a large pot, heat olive oil and butter. Sauté onion, garlic, celery, and carrot until softened.
- Add Potatoes and Seasonings: Stir in potatoes, thyme, paprika, salt, and pepper. Pour in broth, bring to a boil, then simmer until potatoes are tender.
