  • 2 cloves garlic (minced)
  • 4 cups diced potatoes (Yukon gold or russet)
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cups chopped kale or spinach
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, crumbled bacon, chopped parsley

Instructions

  1. Heat olive oil: Heat olive oil in a large pot over medium heat.
  2. Cook sausage: Add the sausage and cook until browned. Remove excess grease.
  3. Sauté aromatics: Add onion and garlic, sauté until fragrant.
