Description

These Shrimp Fajitas are a quick and flavorful meal perfect for busy weeknights. Juicy shrimp marinated in spices, sautéed with colorful bell peppers and onions, and served in warm tortillas with your favorite toppings.

Shrimp Fajitas:

  • 1 pound large shrimp (peeled and deveined)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 yellow onion (sliced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • juice of 1 lime
  • warm flour or corn tortillas
  • chopped cilantro, sour cream, guacamole, and lime wedges for serving

Instructions

  1. Marinate the Shrimp: In a bowl, combine shrimp with 1 tablespoon olive oil, garlic, chili powder, paprika, cumin, onion powder, cayenne pepper, salt, black pepper, and lime juice. Marinate for 10–15 minutes.
  2. Sauté Peppers and Onions: Heat remaining olive oil in a skillet, sauté peppers and onions until tender. Remove and set aside.
  3. Cook Shrimp: In the same skillet, cook marinated shrimp until pink and cooked through, then add peppers and onions back in. Toss together.
  4. Serve: Warm tortillas, fill with shrimp mixture, and serve with toppings.
