Instructions

  1. Prepare Ground Beef Mixture: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon, about 5–6 minutes. Drain excess fat if needed.
  2. Sauté Vegetables: Add onion, garlic, and bell pepper, cooking for 3–4 minutes until softened.
  3. Cook Rice: Stir in rice, beef broth, diced tomatoes, green chilies, and taco seasoning. Bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes, stirring occasionally, until rice is tender and liquid is absorbed.
  4. Finish Dish: Stir in frozen corn and cook for another 2–3 minutes. Remove from heat and sprinkle cheese over the top. Cover and let sit for 2 minutes to melt. Garnish with fresh cilantro and serve with lime wedges.
