For the Beef:
- 1 1/2 pounds beef chuck roast, cut into large chunks
- 1 tablespoon sesame oil
For the Broth:
- 4 cups beef broth
- 1/4 cup low-sodium soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon brown sugar
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/2 teaspoon crushed red pepper flakes (optional)
Additional Ingredients:
- 1 cup sliced mushrooms
- 1 cup shredded carrots
- 2 packs ramen noodles (discard seasoning packets)
- 2 green onions, sliced
- Soft-boiled eggs and sesame seeds for garnish (optional)
Instructions
- Prepare the Beef: Place the beef chuck into the slow cooker.
- Make the Broth: In a small bowl, whisk together sesame oil, beef broth, soy sauce, hoisin sauce, rice vinegar, brown sugar, garlic, ginger, and red pepper flakes. Pour over the beef.
- Cook: Add mushrooms and carrots to the slow cooker. Cover and cook on low for 7–8 hours or on high for 4–5 hours, until the beef is tender. Shred the beef and return it to the slow cooker.
- Add Noodles: Add the ramen noodles during the last 10–15 minutes of cooking, stirring occasionally until softened.
- Serve: Top with sliced green onions, soft-boiled eggs, and sesame seeds if desired.

- Add baby spinach, bok choy, or snap peas for extra greens.
- For a gluten-free version, use rice noodles.
