Smoked Beef Rib Filling:
- 2 pounds smoked beef ribs, meat removed from bones and shredded
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 can (15 ounces) black beans, rinsed and drained
- 1/2 cup corn kernels
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
Assembly:
- 4 large flour tortillas
- 1 cup shredded cheddar or Monterey Jack cheese
- 1/2 cup salsa
- 1/4 cup sour cream
- Fresh cilantro for garnish
Instructions
- Prepare the Filling: Heat olive oil in a skillet over medium heat. Add onion and cook until softened. Stir in garlic, shredded beef rib meat, rice, black beans, corn, chili powder, cumin, smoked paprika, salt, and pepper. Cook until heated through.
- Assemble the Burritos: Warm tortillas, spoon filling onto each, sprinkle with cheese, add salsa and sour cream. Roll up tightly, folding in the sides.
- Serve: Garnish with cilantro and enjoy!

- For a crispy finish, cook filled burritos seam-side down in a hot skillet for a golden exterior.
