For the fritters:
- 2 cups all-purpose flour
- 1/3 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 large eggs
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter (melted)
- 1 1/2 cups peeled and finely diced apples (Granny Smith or Honeycrisp)
- vegetable oil (for frying)
For the vanilla glaze:
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg. In another bowl, whisk together the eggs, milk, vanilla extract, and melted butter. Pour the wet ingredients into the dry and mix just until combined. Gently fold in the diced apples.
- In a deep skillet or heavy-bottomed pot, heat about 2 inches of oil to 350°F (175°C). Use a cookie scoop or tablespoon to drop batter into the hot oil, being careful not to overcrowd the pan. Fry the fritters for 2–3 minutes per side or until golden brown and cooked through. Transfer to a paper towel–lined plate to drain.
- In a small bowl, whisk together powdered sugar, milk, and vanilla until smooth. While fritters are still warm, dip them in the glaze or drizzle it over the top. Let the glaze set for a few minutes before serving.

- You can bake these in a mini muffin tin at 350°F for 12–15 minutes as a lighter option.
