- 1/2 cup mayonnaise

Instructions
- Marinate the Chicken: In a large bowl, whisk together buttermilk, hot sauce, garlic powder, onion powder, paprika, cayenne, salt, and pepper. Add chicken fillets and marinate for at least 1 hour (or overnight for best flavor).
- Prepare the Breading: In a shallow bowl, mix flour, cornstarch, paprika, cayenne, salt, and black pepper.
- Coat the Chicken: Remove chicken from marinade, letting excess drip off. Dredge in flour mixture, pressing to coat well. For extra crunch, double dip by returning to the marinade and dredging again.
- Fry the Chicken: Heat oil in a skillet or deep fryer to 350°F (175°C). Fry chicken fillets for 4–6 minutes per side until golden, crispy, and cooked through. Drain on paper towels.
- Make the Spicy Mayo: In a small bowl, mix mayonnaise with hot sauce to taste for spicy mayo.
- Assemble the Burgers: Spread spicy mayo on buns, then layer with lettuce, tomato, pickles, and crispy chicken. Top with bun and serve hot.
Notes
- For an even spicier kick, add sliced jalapeños or pepper jack cheese.
- These can also be air-fried at 400°F for 15–18 minutes, flipping halfway, with a light spray of oil.
