Description

These Spicy Peanut Noodles are a delicious Asian-inspired dish that combines flavors of creamy peanut butter, soy sauce, and a hint of spice. Perfect for a quick and satisfying meal!

Noodles:

  • 12 ounces spaghetti or rice noodles

Peanut Sauce:

  • 1/3 cup creamy peanut butter
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 2 tablespoons honey or maple syrup
  • 1 to 2 tablespoons sriracha or chili garlic sauce
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup warm water

Vegetables:

  • 2 tablespoons sesame oil
  • 1 red bell pepper, thinly sliced
  • 2 carrots, julienned
  • 2 green onions, sliced

Garnish:

  • 1/4 cup chopped peanuts
  • Fresh cilantro for garnish

Instructions

  1. Cook Noodles: Cook noodles according to package directions until al dente. Drain and set aside.
  2. Prepare Peanut Sauce: In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, lime juice, honey, sriracha, garlic, ginger, and warm water until smooth.
  3. Sauté Vegetables: Heat sesame oil in a large skillet or wok over medium heat. Add bell pepper and carrots, sauté for 3 minutes until slightly softened.
  4. Combine and Serve: Add cooked noodles and sauce to the skillet, toss until well coated and heated through. Remove from heat and top with green onions, chopped peanuts, and cilantro. Serve warm or at room temperature.

Notes

  • Adjust spice by adding more or less sriracha.
  • For extra protein, add grilled chicken, shrimp, or tofu.
  • These noodles can also be enjoyed cold as a refreshing salad.
