Description

Ground Turkey Mixture:

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 1 (12 oz) bag cauliflower rice (fresh or frozen)
  • 2 tablespoons tomato paste
  • 2 tablespoons water
  • juice of 1/2 lime
  • 2 tablespoons chopped cilantro (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, about 6–7 minutes.
  2. Add onion, garlic, bell pepper, and jalapeño. Sauté for 4–5 minutes until softened.
  3. Stir in chili powder, paprika, cumin, red pepper flakes, salt, and pepper. Mix well.
  4. Add cauliflower rice, tomato paste, and water. Cook for 5–7 minutes until cauliflower is tender.
  5. Remove from heat and stir in lime juice. Garnish with cilantro and serve hot.

  • This dish is great for meal prep and reheats well.
  • For extra protein, top with a fried egg.
  • You can also use frozen cauliflower rice—just cook a bit longer to evaporate excess moisture.
