Ground Turkey Mixture:
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeño, seeded and minced
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Additional Ingredients:
- 1 (12 oz) bag cauliflower rice (fresh or frozen)
- 2 tablespoons tomato paste
- 2 tablespoons water
- juice of 1/2 lime
- 2 tablespoons chopped cilantro (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, about 6–7 minutes.
- Add onion, garlic, bell pepper, and jalapeño. Sauté for 4–5 minutes until softened.
- Stir in chili powder, paprika, cumin, red pepper flakes, salt, and pepper. Mix well.
- Add cauliflower rice, tomato paste, and water. Cook for 5–7 minutes until cauliflower is tender.
- Remove from heat and stir in lime juice. Garnish with cilantro and serve hot.
Notes
- This dish is great for meal prep and reheats well.
- For extra protein, top with a fried egg.
- You can also use frozen cauliflower rice—just cook a bit longer to evaporate excess moisture.
