- 1 bay leaf

- 1 sheet puff pastry (thawed)
- 1 large egg (beaten, for egg wash)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C).
- Prepare the beef: Toss beef cubes with flour, salt, and pepper until coated.
- Brown the beef: Heat oil in a large oven-safe pot, brown the beef in batches, then set aside.
- Caramelize the onions: In the same pot, cook onions until golden, then add garlic and tomato paste.
- Cook the filling: Return beef to the pot, add beef stock, ale, Worcestershire sauce, thyme, and bay leaf. Simmer, cover, and transfer to the oven.
- Bake the pie: Cool the filling, transfer to a pie dish, cover with puff pastry, brush with egg wash, and bake until golden and crisp.
- Serve: Rest for 10 minutes before serving.
