  • 200 g (7 oz) pitted dates, chopped
  • 250 ml (1 cup) boiling water
  • 1 teaspoon baking soda
  • 125 g (1/2 cup) unsalted butter, softened
  • 150 g (3/4 cup) brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 200 g (1 1/2 cups) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground star anise
  • Zest of 1 orange
  • Zest of 1 lemon
  • Pinch of salt

For the Glaze

  • 100 g (1/2 cup) brown sugar
  • 60 ml (1/4 cup) fresh orange juice
  • 1 tablespoon unsalted butter


Instructions

  1. Soften Dates: In a bowl, combine the chopped dates and boiling water. Stir in the baking soda and let it sit for about 15 minutes to soften the dates, enhancing their natural sweetness and texture.
  2. Prepare the Pan and Oven: Preheat your oven to 160°C (320°F). Grease and line a 9×5 inch loaf pan with parchment paper to ensure easy removal.
  3. Cream Butter and Sugar: In a mixing bowl, beat the softened butter and brown sugar together until light and fluffy, about 3-5 minutes, which helps incorporate air for a tender crumb.
  4. Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition to create a smooth batter. Stir in the vanilla extract for added flavor.
  5. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, ground star anise, orange zest, lemon zest, and salt to evenly distribute the leavening and spices.
  6. Combine Mixtures: Gradually add the dry ingredients to the butter mixture, alternating with the date mixture. Start and end with the flour mixture, mixing just until combined to avoid overmixing which can toughen the loaf.
