These Strawberry Breakfast Popsicles are a delightful and healthy frozen treat perfect for breakfast or snack time. Made with fresh strawberries, Greek yogurt, and a touch of honey, these popsicles are a refreshing way to start your day.

Fresh Strawberry Mixture:
- 1 1/2 cups fresh strawberries (hulled and chopped)
- 1 cup Greek yogurt (plain or vanilla)
- 1/4 cup milk (any kind)
- 2–3 tbsp honey or maple syrup (to taste)
- 1/2 tsp vanilla extract (if using plain yogurt)
Granola Layer:
- 1/2 cup granola
Instructions
- Blend the Strawberry Mixture: In a blender, combine the strawberries, Greek yogurt, milk, honey or maple syrup, and vanilla extract if using. Blend until smooth and creamy. Taste and adjust sweetness if needed.
- Layer the Popsicles: Gently spoon a small amount of granola into the bottom of each popsicle mold. Pour the strawberry-yogurt mixture over the granola, filling the molds almost to the top. Add another pinch of granola if desired.
- Freeze: Insert sticks and freeze for at least 4 hours, or until solid.
- Release and Serve: To release, run the molds under warm water for a few seconds.
Notes
- Use dairy-free yogurt and milk for a vegan version.
- You can also swirl in extra chopped strawberries or a spoonful of jam for texture and flavor.
