Description

These Strawberry Breakfast Popsicles are a delightful and healthy frozen treat perfect for breakfast or snack time. Made with fresh strawberries, Greek yogurt, and a touch of honey, these popsicles are a refreshing way to start your day.


Ingredients

Fresh Strawberry Mixture:

  • 1 1/2 cups fresh strawberries (hulled and chopped)
  • 1 cup Greek yogurt (plain or vanilla)
  • 1/4 cup milk (any kind)
  • 2–3 tbsp honey or maple syrup (to taste)
  • 1/2 tsp vanilla extract (if using plain yogurt)

Granola Layer:

  • 1/2 cup granola

Instructions

  1. Blend the Strawberry Mixture: In a blender, combine the strawberries, Greek yogurt, milk, honey or maple syrup, and vanilla extract if using. Blend until smooth and creamy. Taste and adjust sweetness if needed.
  2. Layer the Popsicles: Gently spoon a small amount of granola into the bottom of each popsicle mold. Pour the strawberry-yogurt mixture over the granola, filling the molds almost to the top. Add another pinch of granola if desired.
  3. Freeze: Insert sticks and freeze for at least 4 hours, or until solid.
  4. Release and Serve: To release, run the molds under warm water for a few seconds.

Notes

  • Use dairy-free yogurt and milk for a vegan version.
