Scale
Cookie Dough:
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup freeze-dried strawberries, crushed
Cheesecake Filling:
- 4 oz cream cheese, softened
- 2 tablespoons powdered sugar
- 1/4 cup strawberry jam (optional, for extra filling)
Instructions
- Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Cream butter and sugar: In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, then fold in the crushed strawberries.
- Prepare cheesecake filling: Mix softened cream cheese with powdered sugar until smooth.
- Assemble the cookies: Scoop 1 tablespoon of dough, flatten slightly, add cream cheese mixture (and jam), top with another tablespoon of dough, and seal the edges. Shape into a ball and place on the baking sheet.
- Bake: Bake for 11–13 minutes until lightly golden. Cool on the pan before transferring to a wire rack.
Notes
- Freeze-dried strawberries intensify flavor without extra moisture.
- Chill cookies to maintain the cream cheese filling.
- Drizzle with white chocolate for an added touch.
