  • 1/2 cup heavy cream

  • 2 cups fresh strawberries, chopped


Instructions

  1. Make the crust: In a medium bowl, crush the vanilla wafers until finely ground. Pour the melted butter over the crushed wafers and mix well. Press the mixture firmly into the bottom of a 9×13-inch baking dish to form an even crust layer. Place in the refrigerator while preparing the next layers.
  2. Prepare the cheesecake layer: In a large bowl, beat the softened cream cheese until fluffy and smooth. Gradually add the powdered sugar and continue beating. Mix in the sour cream until combined. Gently fold in half of the whipped topping to lighten the mixture. Spread this cheesecake mixture evenly over the chilled cookie crust.
  3. Create the strawberry layer: Dissolve the strawberry gelatin powder in 1 cup of boiling water, stirring until completely dissolved. Add the ice cubes to cool the gelatin mixture. Once cooled but still liquid, stir in the heavy cream and the remaining whipped topping. Fold in the chopped fresh strawberries and mix gently to combine. Carefully spread this strawberry mixture over the cheesecake layer, creating the final layer.
  4. Chill: Cover the assembled dessert and refrigerate for 4 to 6 hours, or until the strawberry layer is set. Before serving, optionally top with additional whipped cream and garnish with fresh whole or sliced strawberries for an attractive presentation.
