- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup plain Greek yogurt or sour cream
- 1 1/2 cups fresh strawberries, diced
- 2 tablespoons coarse sugar for topping (optional)
Instructions
- Preheat oven to 375°F (190°C). Line muffin tin.
- Whisk dry ingredients in a bowl.
- Whisk butter and sugar, add eggs, vanilla, and yogurt.
- Fold in dry ingredients and strawberries.
- Divide batter into muffin cups, sprinkle with sugar, bake for 18-22 minutes.
- Cool in pan before transferring to a rack.
Notes
- For extra flavor, toss strawberries in 1 teaspoon flour before adding to the batter to prevent sinking.
