Description

For the filling:

  • 3 cups fresh strawberries, hulled and diced
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Whipped cream for serving (optional)


Instructions

  1. Preheat oven and prepare baking dish: Preheat oven to 350°F and line a 9×13-inch baking dish with parchment paper.
  2. Make the crust: In a medium bowl, mix flour, powdered sugar, butter, and salt until crumbly. Reserve 1 cup of the mixture for topping. Press the remaining dough firmly into the bottom of the prepared pan. Bake crust for 15 minutes.
  3. Prepare the filling: In a large bowl, combine strawberries, granulated sugar, cornstarch, lemon juice, and vanilla extract.
  4. Assemble and bake: Spread strawberry mixture over the baked crust. Sprinkle with reserved crumb topping. Bake for 30 to 35 minutes until golden and bubbly.
  5. Cool and serve: Cool completely before cutting into bars. Serve with whipped cream if desired.
