Description

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1/2 cup water
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 (10 oz) can diced tomatoes with green chilies, drained

Layering:

  • 2 cups shredded Mexican blend cheese
  • 1 cup salsa
  • 8 small flour tortillas (or corn tortillas)

Optional Toppings:

  • Sour cream
  • Chopped cilantro
  • Sliced jalapeños
  • Diced tomatoes

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook the beef: In a skillet, cook the ground beef and onion, then add taco seasoning and water.
  3. Add beans and veggies: Stir in black beans, corn, and diced tomatoes until warmed through.
  4. Layer the lasagna: Start with salsa on the bottom, then layer tortillas, beef mixture, and cheese. Repeat layers, finishing with cheese on top.
  5. Bake: Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until cheese is melted.
  6. Rest and serve: Let it rest for 5–10 minutes before slicing. Serve with toppings.
