Ground Beef Mixture:
- 1 pound ground beef
- 1 small onion, diced
- 1 packet taco seasoning (or 2 tablespoons homemade)
- 1/2 cup water
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 (10 oz) can diced tomatoes with green chilies, drained
Layering:
- 2 cups shredded Mexican blend cheese
- 1 cup salsa
- 8 small flour tortillas (or corn tortillas)
Optional Toppings:
- Sour cream
- Chopped cilantro
- Sliced jalapeños
- Diced tomatoes
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- Cook the beef: In a skillet, cook the ground beef and onion, then add taco seasoning and water.
- Add beans and veggies: Stir in black beans, corn, and diced tomatoes until warmed through.
- Layer the lasagna: Start with salsa on the bottom, then layer tortillas, beef mixture, and cheese. Repeat layers, finishing with cheese on top.
- Bake: Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until cheese is melted.
- Rest and serve: Let it rest for 5–10 minutes before slicing. Serve with toppings.
Notes
- You can substitute ground turkey or chicken for the beef.
- For a spicier kick, use hot salsa or add hot sauce to the meat mixture.
