Spaghetti:

  • 8 ounces spaghetti

Meat Sauce:

  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • ½ cup water
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 can (8 oz) tomato sauce
  • 1 cup frozen corn (optional)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Additional:

  • 2 cups shredded cheddar or Mexican blend cheese
  • ½ cup sour cream
  • Chopped fresh cilantro or green onions for garnish (optional)

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C).
  2. Cook Spaghetti: Cook spaghetti in salted boiling water until al dente. Drain and set aside.
  3. Prepare Meat Sauce: Brown ground beef and onion in a skillet. Add taco seasoning, water, tomatoes, tomato sauce, and corn. Simmer, then stir in sour cream.
  4. Combine Ingredients: Toss cooked spaghetti with meat sauce. Transfer to a baking dish.
  5. Add Cheese and Bake: Sprinkle shredded cheese over the top. Bake for 20–25 minutes until bubbly and golden.
  6. Garnish and Serve: Garnish with cilantro or green onions. Serve warm.
