Ingredients

Scale

Main Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion (diced)
  • 1 green bell pepper (diced)
  • 4 cloves garlic (minced)
  • 2 pounds ground beef (80/20)

Spices and Seasonings:

  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)

Canned Ingredients:

  • 2 (15 oz) cans diced tomatoes (with juices)
  • 1 (15 oz) can tomato sauce
  • 1 (15 oz) can kidney beans (drained and rinsed)
  • 1 (15 oz) can pinto beans (drained and rinsed)

Liquid:

  • ½ cup beef broth or water

Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot or Dutch oven over medium heat. Sauté onion and bell pepper until softened. Add garlic and cook briefly.
  2. Brown Beef: Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  3. Add Spices: Stir in chili powder, cumin, smoked paprika, oregano, salt, pepper, and cayenne. Cook briefly to bloom spices.
  4. Combine Ingredients: Add diced tomatoes, tomato sauce, beans, and broth. Stir well to combine.
  5. Simmer: Bring to a boil, then reduce heat and simmer uncovered for 30–45 minutes until thickened.
  6. Serve: Serve hot with desired toppings like cheese, sour cream, or green onions.

Notes

  • For a spicier kick, add more cayenne or jalapeño.
