- 6 small flour tortillas
For the filling:
- 6 large eggs
- 1/2 cup milk or half-and-half
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup cooked bacon or diced ham (optional)
- 1/2 cup chopped spinach or bell peppers
- 1/4 cup chopped green onions
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder

Instructions
- Preheat the oven: Preheat the oven to 375°F.
- Prepare the dish: Lightly spray a 9-inch pie dish or deep-dish tart pan with nonstick spray. Line the dish with overlapping flour tortillas to form a crust.
- Mix the filling: Whisk eggs, milk, salt, pepper, and garlic powder. Stir in cheeses, meat, spinach or bell peppers, and green onions.
- Fill and bake: Pour the mixture into the tortilla crust. Bake for 30–35 minutes until set and golden.
- Serve: Let cool before slicing and serving.
