Instructions
- Preheat and Prepare: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients: Whisk together flour, baking powder, and salt in a bowl.
- Cream Butter and Sugar: In a large bowl, beat butter and sugar until light and fluffy.
- Add Wet Ingredients: Mix in the egg, vanilla extract, dissolved espresso powder, and mascarpone cheese until smooth.
- Combine and Bake: Gradually add dry ingredients to wet mixture, then fold in chocolate chips. Scoop dough onto baking sheet and bake for 10–12 minutes.
- Cool and Serve: Let cookies cool on the pan before transferring to a wire rack. Dust with cocoa powder once cooled.
