Description

A delightful and tropical twist on a classic chicken and rice dish. This recipe features tender chicken, sweet pineapple, and savory bell peppers in a flavorful Asian-inspired sauce, served over fragrant jasmine or basmati rice.

For the Chicken:

  • pounds boneless, skinless chicken breasts or thighs (cut into bite-sized pieces)
  • 1 tablespoon olive oil

For the Stir-Fry:

  • 1 red bell pepper (sliced)
  • 1 cup fresh or canned pineapple chunks (drained if canned)
  • 2 cloves garlic (minced)
  • 1 teaspoon fresh ginger (grated)
  • 2 cups cooked jasmine or basmati rice

For the Sauce:

  • ¼ cup low-sodium soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon ketchup
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5–6 minutes until browned and cooked through. Remove and set aside.
  2. Prepare the Stir-Fry: In the same skillet, add garlic, ginger, bell pepper, and pineapple chunks. Sauté for 3–4 minutes until the peppers are slightly tender and the pineapple is lightly caramelized.
  3. Make the Sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, ketchup, and sesame oil. Pour into the skillet and bring to a simmer. Stir in the cornstarch slurry and cook for 1–2 minutes until the sauce thickens.
  4. Combine and Serve: Return the chicken to the pan and toss to coat in the sauce. Simmer for another 2 minutes. Serve over a bed of warm cooked rice and garnish with chopped green onions or sesame seeds if desired.

Notes

  • For extra heat, add a pinch of red pepper flakes or a drizzle of sriracha.
  • This dish also works great with shrimp or tofu as a protein swap.
