  • 1 pound beef stew meat, cut into small chunks
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 1 large potato, peeled and diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup peas (fresh or frozen)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Step 1: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef stew meat and sear until browned on all sides, about 5–7 minutes. Remove the beef and set aside.
  2. Step 2: In the same pot, add the onion and cook for 2–3 minutes until softened. Add the garlic and sauté for another 30 seconds. Return the beef to the pot along with carrots, celery, potatoes, green beans, diced tomatoes, beef broth, thyme, oregano, bay leaf, salt, and pepper.
  3. Step 3: Bring to a boil, then reduce the heat to low. Cover and simmer for 45–60 minutes, or until the beef is tender and the vegetables are cooked through.
  4. Step 4: Stir in the corn and peas and simmer for another 5–10 minutes. Remove the bay leaf before serving. Garnish with fresh parsley if desired.
