  • 1 cup frozen peas or corn (or both)

  • 1 can (14.5 oz) diced tomatoes with juice
  • 6 cups vegetable broth

  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. Sauté the aromatics and base vegetables: In a large pot, heat olive oil over medium heat. Add chopped onion, minced garlic, sliced carrots, and celery. Sauté for 5–6 minutes until the vegetables soften and release their aromas.
  2. Add the remaining vegetables: Stir in diced zucchini, peeled and diced potato, and chopped green beans. Cook for another 3–4 minutes to start tenderizing the vegetables.
  3. Add liquids and seasonings: Pour in the diced tomatoes with their juice and vegetable broth. Add dried thyme, dried basil, salt, and black pepper. Stir well to combine all ingredients.
  4. Simmer the soup: Bring the mixture to a boil, then reduce heat to low and cover the pot. Let the soup simmer for 25–30 minutes, or until all vegetables are tender and flavors meld together.
  5. Finish with frozen vegetables: Stir in the frozen peas or corn (or both) and allow the soup to simmer uncovered for an additional 5 minutes to heat through.
  6. Adjust and serve: Taste the soup and adjust the seasoning if needed. Ladle into bowls and garnish each serving with freshly chopped parsley. Serve hot and enjoy.
